The choice of the coffee:
The ritual of tasting and selecting the beans. illycaffè only purchases the best Arabica coffee available on the market.
Arabica coffee has a rich flavor with a caffeine content lower than Robusta coffee. Caffeine content of Arabica is 1.5% while Robusta may have a caffeine value twice that amount.
Before the purchase, samples of coffee lots are analyzed and tasted by expert tasters, many with decades of experience.

Illy's decaffeinated coffee is unaltered in taste and aroma due to a combination of a quality product and process.
The decaffeination process uses illy's best blend of 100 percent Arabica coffee, certified by Qualite France. The caffeine is then removed through the use of dichloromethanol, a solvent whose low boiling point dissolves the caffeine and is easily removed through evaporation, leaving almost no trace on the roasted beans. The process itself is certified by the Det Norske Veritas.
Once the caffeine has been removed, illy repeatedly tests the final product, ensuring extremely low levels of both dichloromethanol and caffeine – as well as ensuring a cup of coffee that even an expert couldn't tell was decaffeinated.
